The Concept: Fine Country Dining

After honing his craft within some of London’s most prestigious private members’ clubs, Chef Bayley returns to his roots in South Lincolnshire with a clear purpose:


To bring restaurant-level precision into warm, character-filled local settings.


Each evening is designed around one elegant shared table in the historic room — encouraging relaxed conversation, shared experience, and a slower pace of dining.


Couples will be seated side-by-side, with all guests dining together across one beautifully styled table beneath the room’s coffered ceilings and carved oak detail.
